Culture on a Plate: A Nordic–British Experience in AYGE1102

Last week, first-year undergraduate students enrolled in the English for Communication (AYGE1102) course stepped out of the classroom to experience 'Dining Etiquette and Culinary Culture' firsthand. Following a student vote, the course instructor, Dr. Phakhim Kaoian, coordinated a visit to Kasnas BKK, a restaurant renowned for its authentic Nordic-style design and ambiance. Upon our arrival, the Restaurant Manager, Khun Arthit Thipmak (Khun Nui), welcomed the group with warm hospitality. The highlight of the visit was a live cooking demonstration by Khun Kewalin Pithayanukul (Chef Putch), conducted entirely in English. The session was incredibly comprehensive, covering everything from ingredient preparation to the historical and cultural drivers behind Western culinary traditions. Additionally, students gained valuable insights into food safety—specifically the handling of fresh salmon—and the environmental factors that influence Western diets. We would like to extend our sincere gratitude to Chef Putch for sharing her expertise and inspiration, as well as for providing a specially curated meal set for our students.
